Description
Fortaleza is made by Guillermo Sauza, great-great-grandson of Don Cenobio Sauza, in the town of Tequila, Jalisco (NOM 1493). The process is fully traditional: agave is cooked in stone ovens, crushed with a stone tahona, fermented in open-air wooden tanks and double-distilled in small copper pot stills.
The unaged Blanco is a pure expression of cooked agave, with citrus, black pepper, olive brine and earthy, buttery notes. A cult favorite among agave lovers, best sipped neat.
