Pearse Lyons Distillery operates in a restored church in Dublin's Liberties. Pearse Original 5 Year is a 43% blend of malt and grain whiskeys aged in Kentucky bourbon barrels. It shows citrus, vanilla, caramel, chocolate, a touch of spearmint and a wisp of smoke.
