Textbook is the label of winemaker Jonathan Pey. Its 2023 Paso Robles Cabernet Sauvignon blends fruit from several Paso sub-districts with a little Syrah and Petite Sirah, aged 13 months in French oak. It is rich and spicy, with dark fruit and firm but approachable tannins.
